2005 Château Combebelle AOC St Chinian

LIMITED STOCKS REMAINING – ONLY AVAILABLE FROM THE CELLAR DOOR
The grapes were picked by hand and vinified separately in open wooden vats. Traditional fermentation with pigage during 15-20 days. The wine then spent 12 months in 1-year-old barrels with a further 6 months in tank before bottling.
Full bodied, well balanced and fruity wine.

Serve at room temperature.
Delicious just to drink now, or perfect with sanglier (wild boar), duck or venision.
Ageing potential 2-3 years.

2006 Château de Combebelle AOC St Chinian

Hand-picked grapes, traditional vinification in open fermenters, ageing in barrel for 12 months, followed by 4 months in tank – this wine is a reflection of the terroir and varietals making up this blend. The character of the fruit shines through in the aroma and on the palate. The tannins add a roundness of flavour and complexity in the mouth.

Serve at room temperature. Ideal with game, red meat and strongly flavoured cheese.
Drinking well now, and continuing to evolve in the bottle.
Ageing potential 3-5 years.

2006 Château de Combebelle AOC St Chinian "Henri"

STRICTLY LIMITED EDITION
Hand-picked grapes, traditional vinification in open fermenters, ageing in barrel for 12 months, followed by 4 months in tank – this wine is represents more the character of the grape and the two vineyards selected for this blend. The character of the lighter soils creates a more elegant nose and palate. The ripeness of the fruit is enveloped by softly embracing tannins to add richness and complexity in the finish.

Serve at room temperature. Ideal with game, red meat and strongly flavoured cheese.
Drinking now, but will benefit from 12 months cellaring.
Ageing potential 5-7 years.

The aim with this wine was to create a blend from some of the lighter, schist soils on the vineyard to produce a blend wine with more elegance and structure. The name “Henri” is in honour of my new nephew born on June 23 rd 2007 – the day his granny turned 80!” (Catherine Wallace – La Vigneronne)

2008 Château de Combebelle "Cerisiers" AOC St Chinian Rosé

GOLD MEDAL WINNER – A Rose to blow away the « economic blues »
The second AOC St Chinian rosé to be released – this wine is a blend of Syrah/Grenache made predominantly from free-run juice. Picked one night starting at 4am (!) to preserve the freshness of fruit, this wine has a subtle aroma of redcurrant/strawberry. Gorgeous bright pink colour. Lively clean fresh fruit flavours on the palate – an absolute must for Summer drinking!

Serve chilled either as an aperitif or with light food (salads, chicken, cheese (particularly goats cheese), paella and fish).

2007 Château de Combebelle AOC St Chinian "Les fleurs sauvages"

LIMITED AVAILABILITY FROM CELLAR DOOR ONLY
This is a deliciously fragrant wine full of ripe red and blackberry fruits. The flavours are soft and round with hints of spice. The tannins are soft and mellow. The wine has spent 12 months in oak and a further 6 months in tank. This is a new blend from Combebelle from 2 different plots (Cerisiers - Syrah and Pati Noir - Grenache) showing the versatility and concentration of our wines. Drinking well now but could age a further 3-5 years. This wine is a “Limited Edition” only.

 

2007 Château de Combebelle AOC St Chinian Rouge

NEW RELEASE
This is our core blend of 70% Syrah and 30% Grenache. The wine is a blend of grapes from the whole vineyard and thereby represents the true “essence” and “character” of Combebelle. Intense ripe fruit aromas with a hint of sweet spice on the nose. Soft rounded flavours with easy drinking tannins and a long finish. An ideal wine for everyday drinking!

 

2009 Château de Combebelle AOC St Chinian Rosé "Cerisiers"

NEW RELEASE
Our third successive rosé ! 100% free run juice from grapes picked early in the morning to preserve the lively fresh fruit character in the wine. A seductive pale pink colour. Elegant floral aromas with a subtle hint of Summer fruits. Soft fruit flavours and lively acidity make this an ideal wine for Summer drinking!
